Specialty coffee in Slovakia.

Bratislava was Pressburg once, with the grand cafés of the Habsburg empire; then it was socialist, and coffee meant dark roasted blends and turecká káva, grounds in a glass with boiling water on top. Specialty arrived the way it often does in small countries: on a bicycle. In 2012 Martin Králik started serving proper espresso from custom tricycles in the old town, and a year later a multi-roaster brew bar opened in the Old Market Hall pouring guest roasters from across Europe.

The roasters followed fast (Goriffee in Bratislava, Concept in the spa town of Piešťany, Diamond's on the edge of the capital, Mlsnacava in Banská Bystrica), and the scene spread into towns most visitors never see: Lučenec, Krupina, Komárno. And in 2015 a twenty-year-old Slovak, Michal Molčan, founded Standart, the print magazine coffee people from Tokyo to Toronto now subscribe to.

The Slovak version is small, curious and argumentative. Its roasters cup hundreds of samples to pick a few dozen lots, its enthusiasts debate infused coffee on a national blog, and the country ships across Central Europe through the same multi-roaster shops as its Czech, Hungarian and Austrian neighbours.

Bratislava has the founders. Goriffee has roasted in the capital since 2013 with direct lines to farms. Diamond's, a family roastery just outside the city, cups hundreds of samples a year to choose a few dozen, puts local artwork on the bags and makes chocolate on the side. Triple Five, Sweet Beans and Blue Mondays roast for the city's cafés, and black. runs the counters. Kávoholik roasts for filter and espresso and has collected international taste awards.

The regions carry more than their share. Concept Coffee Roasters in Piešťany is the country's regional anchor, with flagship cafés in the spa town and in Bratislava. Mlsnacava in Banská Bystrica roasts, trains baristas and sells the machines, all under one roof. Coffia

Bratislava has the cafés and the founders; the roasteries are scattered from Piešťany to Prešov, and every one of them ships nationwide.

Espresso is still the default in the cafés, and the specialty places roast it light-to-medium and pull it on serious machines. Filter (V60, Chemex, AeroPress, batch brew in the mornings) has a solid following in the cities. On the shelf, Brazil, Colombia and Ethiopia anchor most catalogs, with Kenya, Rwanda, Costa Rica and Peru in the single-origin lists and the occasional Vietnamese or Indonesian lot from the roasters who like a surprise.

Washed lots are the reference for filter, naturals for body and sweetness in espresso, and the experimental end (anaerobic, carbonic, thermal-shock, fruit co-ferments) is where the micro-roasters play and the enthusiasts argue about what counts as coffee. After washed, the shelves lean on natural (×78) and honey (×20). Pink Bourbon, Gesha, Sidra and Chiroso appear as limited releases. Decaf has moved to sugarcane and water processes, with 20 decaf coffees listed right now. 66 of the current listings are roasted for filter or for both methods.

Slovak roasters price in euros and their customers, by their own account, expect an everyday bag to stay affordable. These figures come from every Slovak coffee currently listed with a price, not a sample we chose. The going rate today is €48 per kilogram, against €47 across every roaster in the directory.

The ladder reads like this: everyday espresso and blends around €39 per kilogram, single-origin filter lots from about €60 per kilogram, and the rarest bag currently listed at €400 per kilogram. 404 coffees carry a price today. Most roasters run a webshop with a subscription, free domestic shipping needs a few bags in the basket, and multi-roaster shops like Kofio carry Slovak roasters alongside the Czech and Hungarian ones.
