Stuttgart sits in a bowl, the Kessel, ringed by vineyards and engineering firms, and its coffee has the city's temperament: careful, well made, and slow to change. Hochland has roasted here since 1930 and still has a stall in the Markthalle. Italian guest workers brought a real espresso habit after the war, and Meike and Manfred Fröhlich started drum roasting estate coffees in the West in May 2000, years before the word specialty was common here.
The third wave arrived in 2014, when Stefan Dachale opened Mókuska, Hungarian for little squirrel, on Johannesstraße with a Giesen in the window, light roasts, brew ratios and V60s. By its own account it was the city's first dedicated specialty roastery. The same year BlackBird started in Leinfelden by the airport, and Heiko Blocher opened Schwarzmahler in the East as an evening espresso bar with a hand-pulled Bosco lever machine.
The next decade added an engineer's touch. Mókuska moved its roasting to Feuerbach in 2018; Meris Prosic opened TARABA as a guest-roaster café that year and in 2025 installed a hot-air roaster and opened a second shop in Bad Cannstatt; Lovely Lots started in Esslingen and opened a café in the Süd. The city has no coffee festival of its own, as of this autumn, but it has Intergastra every second February and a lot of people who care about water chemistry.
Hochland Kaffee is founded, and later takes a stall in the Markthalle that generations of Stuttgarters buy their beans from.

Mókuska is the modern reference: light to medium roasts from a Giesen in Feuerbach, direct sourcing from Ethiopia, Brazil, Colombia, Mexico and Nicaragua, a house espresso called No. 3 built to cut through oat milk, a carbonic-macerated Conilon for the brave, and cascara early. TARABA roasts one profile per lot on a hot-air machine for espresso and filter alike, buys from producers like Rodrigo Sánchez and Nestor Lasso, sells a yeast-inoculated Colombian called Coco Blossom, and says it puts twelve percent of profits back into the communities it buys from.
Fröhlich roasts slow and low-acid for the regional palate, espresso blends called Caresi and Alba and a Vietnamese Robusta in a black label, with Damir Lazarevic now at the drum. Schwarzmahler roasts dark for its lever machine and its Kesselkaffee blend. Kaffeerakete has roasted by the door of its West café for a quarter of a century. Cappuccinos and flat whites, mostly, with oat milk at the same price as dairy in the specialty cafés, which is why the house espressos here are built on chocolate, marzipan and caramel. On the shelf, Peru, Ethiopia and Nicaragua lead Stuttgart's listed origins, washed leads the processes with natural behind it.
The Italian inheritance keeps the dark roasts honest: Fröhlich, Schwarzmahler and Cortégas roast medium-dark and low-acid, and specialty-grade Robusta appears on purpose at Mókuska and Fröhlich. The enthusiasts buy light: TARABA's omni-roasts, Mókuska's single origins, BlackBird's anaerobic naturals, and yeast-inoculated and thermal-shock lots from Colombian producers at the top.
