Specialty coffee in Austria.

Vienna has had coffee houses since the 1680s, and the way it drinks in them (a Melange on a silver tray with a glass of water, the spoon face down, a newspaper and no hurry) is on Austria's own list of cultural heritage. The coffee in the cup was the least important part. It was dark, it was blended, and it came from one of two big roasters.

The new wave started outside the capital. A couple opened 220 Grad in Salzburg in 2008, roasting light and serving breakfast. Vienna caught up between 2011 and 2014 with Kaffeefabrik, Coffee Pirates and Jonas Reindl, and a coffee festival in 2015 gave the scene a room to meet in. Then the titles came: Felix Teiretzbacher of St. Pölten won the World Coffee Roasting Championship in 2022, and Martin Wölfl won the World Brewers Cup in 2024.

Two things make the Austrian version its own. The specialty cafés kept the tray and the water glass and changed only the coffee. And Innsbruck is home to Cropster, the software many roasters around the world use to log their roasts, so a fair share of the world's light roasts are recorded on Tyrolean code.

Vienna has the range. Jonas Reindl buys direct and prints its prices, with branding borrowed from the city's trams. GOTA is where the competitors train, with a flower shop attached. A team member holds the 2023 Austrian barista title and the 2026 coffee-cocktail title. Kaffeefabrik buys organic, farmer-owned lots through a European roasters' cooperative. Coffee Pirates roasts in full view of its café, Süßmund roasts organic lines like Panther Royale, Alt Wien is an old Viennese roaster gone organic and Fairtrade with a rum-barrel-aged coffee on the side, and Fürth fills out the city.

Outside Vienna, Felix Kaffee

Vienna has the most roasters, but Austria's specialty story began in Salzburg and its world champions come from St. Pölten and Innsbruck; the west and the south each have scenes of their own.

The Melange still rules the coffee house (espresso, steamed milk, foam), with the Einspänner and its whipped cream, and the Großer Brauner with a jug of cream on the side. The specialty cafés kept the names and the tray and put a light roast underneath, then added flat whites, batch brew and V60. Oat milk is standard and several cafés dropped the surcharge. On the shelf, Colombia, Ethiopia and Brazil anchor most catalogs, with Peru and Mexico strong among the organic roasters, Panama at the competition end, and Uganda and Rwanda through development projects.

Organic and Fairtrade seals matter here more than in most countries. Alt Wien, Süßmund and Kaffeefabrik build whole ranges around them. Washed and natural lots carry the volume, and anaerobic, thermal-shock and co-fermented coffees have moved into the Vienna roasters' seasonal lists. After washed, the shelves lean on natural (×85) and honey (×23). Decaf is moving to Swiss Water, carbon-dioxide and sugarcane processes, with 29 decaf coffees listed right now. 147 of the current listings are roasted for filter or for both methods.

Austrian roasters price like their German neighbours, and organic seals add a little. These figures come from every Austrian coffee currently listed with a price, not a sample we chose. The going rate today is €48 per kilogram, against €47 across every roaster in the directory.

The ladder reads like this: house espresso blends at the everyday end around €39 per kilogram, organic single origins and washed East Africans from about €60 per kilogram, and the rarest bag currently listed at €320 per kilogram. 459 coffees carry a price today.
