How it was processed.

Everything here comes from the roaster's own listing. Nothing is added.

Processing steps
  1. The coffee cherries are pulped to remove the outer layers of the fruit, leaving just the sticky mucilage.
  2. The beans are then soaked in water and left to ferment in tanks between 12 to 72 hours until the mucilage breaks down and is washed off.
  3. The beans are removed from the tanks and dried on patios in the sun.
