Processing steps
  1. Only ripped coffee cherries were harvested
  2. selected by density and sanitized
  3. fermented in tank for 24 hours in skin
  4. pulp and fruit removed
  5. fermented in tanks for 60 hours
  6. washed and placed on air-flow canopy beds to dry for 16 - 20 days
