Process
How it was processed.
Everything here comes from the roaster's own listing. Nothing is added.
- Processing steps
- Microorganisms combined with Cholupa, dried coconut, and Panela sugar ferment for 8 days in closed containers.
- Whole coffee cherries added to the mixture for 7 additional days of fermentation.
- Cherries removed, washed with water, and dried as a natural on covered beds for up to 30 days.
Sensory
Estimated profile.
- Sweetness
- Cleanness
- Fruitiness
Estimated from the roaster's own description (inferred from product text). Not a cupping score. Each bar runs from 0 (lower) to 100 (higher) for that characteristic. These are approximate indications, not measured results; small differences should not be treated as meaningful.
