How it was processed.

Everything here comes from the roaster's own listing. Nothing is added.

Processing steps
  1. The harvest is picked by hand, selecting only 100% ripe cherries, and is usually done in 4 picking sessions per season.
  2. Pulping is done on the same day of the harvest
  3. the coffee is then fermented for 10-16 hours
  4. The drying continues for 3-4 days thanks to the sunny climate on the roof of the house.
