Anaerobic; dry fermented
Processing steps
  1. ripe red cherries
  2. dry fermented in PE bags for 120 hours
  3. slow-dried for 30 days
  4. Phase 1: whole cherries were dried for 3 days
  5. stored in PE bags for 2 weeks in a dark room
  6. Phase 2: cherries were slow-dried until they reached 12% moisture
  7. allowed to rest in a dark room for 4 weeks before being hulled
