  1. Harvested at peak maturity
  2. Placed on patio to begin drying four hours after harvest
  3. First five days of drying on patio in the sun from 9 AM to 3 PM, turned hourly
  4. Moved to African-style raised beds to finish drying from 9 AM to 4 PM, turned hourly
  5. Total drying time of 22 days
  6. Hulled at dry mill in Fraijanes
