How it was processed.
Everything here comes from the roaster's own listing. Nothing is added.
- Processing steps
- Kaffebären handplockas och får vila cirka 24 timmar innan de sorteras och skalas.
- Man behåller allt fruktkött under processen.
- Därefter fermenteras kaffet i tunnor där pH-värdet sänks från cirka 6–8 till runt 4 vid en temperatur på 25–30 °C.
- Efter fermenteringen torkas kaffet i cirka 15 dagar på afrikanska bäddar
- lagras sedan i pergament i två månader innan det sorteras efter vikt, storlek, densitet och färg.
