- Fermented inside fermentation tank for 3 days filled with coffee cherries' juice (mosto)
- Processing steps
- Harvesting and quality checking at Botolinggo Mill
- Washing, density-sorting, and color-sorting
- Anaerobic fermentation in mosto for 3 days
- Drying for 11–13 days, potentially finished in mechanical drier below 40 degrees
- Hulling and secondary sorting (pneumatic, screen size, gravity, color)
