How it was processed.
Everything here comes from the roaster's own listing. Nothing is added.
- Processing steps
- Mechanically harvested cherries are sorted by density, selecting only ripe and slightly overripe fruit.
- Cherries are placed in deep static drying boxes with air circulating from below.
- Drying over 11 days at 35°C.
- Rests for nearly a month.
- Milled once fully stabilised.
