Double fermentation; yeast inoculation
Processing steps
  1. floated to remove defects
  2. first stage fermentation 60 hours in whole cherry
  3. partially dried around 12 days to around 20% moisture
  4. re-hydrated with must and specific yeast for second controlled fermentation of roughly 4 days
  5. drying continues for 76 hours at average 40°C
  6. stabilisation in GrainPro
